At least under the APK without Google Ads option and I think it's under a couple of others, there's an option to Remove Google Play dependencies. You may have to throw a few other options at it to break the connection.
First make sure Auto Update is disabled in store just in case.
If it works, make sure it no longer shows as currently installed in Play. Understand that it won't update from that point forward, unless you install the updated app from Play again and repeat the process.
